    Prepare the Potatoes

    Peel and cut the potatoes into fry shapes. Soak them in water for 30 minutes, then drain and dry thoroughly.

    Fry the Potatoes

    Heat oil in a deep skillet over medium heat. Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

    Cook the Steak

    Season the beef tenderloin with salt and black pepper. Heat olive oil in a skillet over high heat. Sear the steaks for about 3-4 minutes on each side for medium-rare. Remove and let rest.

    Poach the Eggs

    In a saucepan, bring water and white vinegar to a simmer. Crack the eggs into separate bowls, then gently slide them into the simmering water. Poach for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk the egg yolks with lemon juice. Place over a pot of simmering water, whisking constantly. Gradually add melted butter until thickened. Season with salt and pepper.

    Assemble the Dish

    On each plate, place a portion of home fries, top with the steak, a poached egg, drizzle with hollandaise, and garnish with chimichurri sauce.
