    Prepare the Duck

    Preheat your oven to 375°F (190°C). Season the duck breasts with salt and pepper. Place them skin-side up on a baking sheet and roast in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Let the duck rest for 5 minutes before slicing.

    Cook the Bacon

    While the duck is roasting, in a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Prepare the Vinaigrette

    In a small bowl, whisk together 3 tablespoons of balsamic vinegar, 1 tablespoon of olive oil, salt, and pepper to taste. Adjust seasoning as needed.

    Assemble the Salad

    In a large bowl, combine the fresh spinach, sliced duck, crumbled bacon, red onion, toasted pecans, and blue cheese. Drizzle with the balsamic vinaigrette and toss gently to combine.

    Divide the salad among plates and serve immediately, garnished with extra blue cheese if desired.
