    Prepare the Pork Grillades

    Season the pork tenderloin with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the pork on all sides until browned. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add onion, celery, carrot, and garlic. Sauté until softened, about 5 minutes.

    Deglaze the Skillet

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and reduce by half.

    Braise the Pork

    Return the pork to the skillet, add veal stock, bay leaves, and thyme. Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours until the pork is tender.

    Make the Grits

    In a separate pot, bring water to a boil. Stir in the stone-ground grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, until thickened (about 20-25 minutes).

    Finish the Grits

    Once the grits are cooked, stir in cheddar cheese and butter until melted and creamy.

    Slice the braised pork and serve it over a bed of cheesy grits, spooning the red wine veal stock gravy over the top.
