Ingredients for Grace Breakfast Sandwich

Method

Directions for Grace Breakfast Sandwich

  1. 1

    Make the Biscuit

Preheat your oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 15-20 minutes or until golden brown.

  2. 2

    Cook the Pancetta

In a skillet over medium heat, cook the pancetta slices until crispy, about 3-4 minutes per side. Remove and drain on paper towels.

  3. 3

    Prepare the Collard Greens

In the same skillet, add the collard greens and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.

  4. 4

    Make the Marbled Eggs

In a mixing bowl, whisk the eggs and season with salt and pepper. In a non-stick skillet, pour half of the eggs and let them start to set. Swirl in the remaining eggs and gently stir to create marbled patterns. Cook until just set.

  5. 5

    Prepare the Hot Sauce Hollandaise

In a small bowl, combine mayonnaise, lemon juice, hot sauce, and cayenne pepper. Mix well until smooth.

  6. 6

    Assemble the Sandwich

Slice the biscuit in half. Layer the marbled eggs, crispy pancetta, and sautéed collard greens. Drizzle with hot sauce hollandaise. Top with the other half of the biscuit and serve.
