Make the Biscuit
Preheat your oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 15-20 minutes or until golden brown.

Cook the Pancetta
In a skillet over medium heat, cook the pancetta slices until crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Collard Greens
In the same skillet, add the collard greens and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.

Make the Marbled Eggs
In a mixing bowl, whisk the eggs and season with salt and pepper. In a non-stick skillet, pour half of the eggs and let them start to set. Swirl in the remaining eggs and gently stir to create marbled patterns. Cook until just set.

In a small bowl, combine mayonnaise, lemon juice, hot sauce, and cayenne pepper. Mix well until smooth.
