    Prepare the Grits

    In a medium saucepan, bring water or chicken broth to a boil. Add salt and slowly whisk in the stone-ground grits. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally, until thickened.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in butter and shredded cheese until melted and fully combined. Adjust seasoning with salt and pepper to taste.

    Prepare the Fish or Shrimp

    Season the fresh fish or shrimp with olive oil, paprika, garlic powder, salt, and pepper. Choose your cooking method: grill, blacken, or fry.

    Cooking Methods

    For grilling, preheat the grill and cook for about 3-4 minutes per side for fish or until shrimp are pink. For blackening, heat a cast-iron skillet over high heat and cook for 2-3 minutes per side. For frying, heat oil in a skillet and cook until golden brown.

    Serve

    Spoon the cheese grits onto a plate and top with the cooked fish or shrimp. Garnish with lemon wedges.
