    Make the Mornay Sauce

    In a saucepan, melt butter over medium heat. Add flour and whisk for about 1 minute until it forms a paste. Gradually add milk, whisking constantly until the mixture thickens. Stir in Gruyere cheese, nutmeg, salt, and pepper. Set aside.

    Assemble the Croque Monsieur

    Spread Dijon mustard on one side of each brioche slice. On two slices, layer the ham and Gruyere cheese, then top with the remaining brioche slices, mustard side down.

    Toast the Sandwich

    In a skillet, melt a bit of butter over medium heat. Add the sandwiches and cook until golden brown on both sides, about 3-4 minutes per side. Pour the Mornay sauce over the top of the sandwiches.

    Add the Egg

    In a separate pan, fry the eggs sunny-side up. Once the sandwiches are toasted and the sauce is bubbly, top each sandwich with a fried egg.
