Prepare the Tartar Sauce
In a bowl, combine mayonnaise, dill pickle relish, lemon juice, capers, garlic powder, and paprika. Mix well and set aside.

Prepare the Fish
In a shallow bowl, whisk together eggs and milk. In another bowl, mix flour, cornmeal, salt, and black pepper. Dip each fish fillet into the egg mixture, then coat with the flour mixture.

Cook the Fish
Heat oil in a frying pan over medium heat. Fry the coated fish fillets for about 4-5 minutes on each side until golden brown and cooked through. Alternatively, grill the fish on a preheated grill for 3-4 minutes per side.

Assemble the Sandwich
Spread a layer of tartar sauce on the bottom half of each toasted bun. Place a lettuce leaf, followed by a fried or grilled fish fillet, tomato slices, and Wickles. Top with more tartar sauce and cover with the top half of the bun.
