Prepare the Horseradish Cream Sauce
In a small bowl, mix together the sour cream, prepared horseradish, lemon juice, and salt. Set aside in the refrigerator to chill.

Cook the Blackened Filet
Preheat your skillet over medium-high heat. Rub the filet mignon steaks with olive oil and generously coat them with blackening seasoning. Place the steaks in the hot skillet and sear for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from the skillet and let them rest.

Wilt the Garlic Spinach
In the same skillet, add 1 tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach, salt, and pepper. Toss until the spinach is wilted, about 2-3 minutes.

Serve
On a plate, place a generous portion of wilted garlic spinach, top with the blackened filet, and drizzle with horseradish cream sauce.
