Pork Loin

    Prepare the Pork

    Season the pork loin with salt, black pepper, and thyme. Heat olive oil in a skillet over medium-high heat and sear the pork loin on all sides until browned. Transfer to an oven preheated to 375°F (190°C) and roast for about 25-30 minutes or until it reaches an internal temperature of 145°F (63°C). Let rest before slicing.

Pommes Purée

    Make the Pommes Purée

    Peel and chop the Yukon Gold potatoes. Boil in salted water until tender, then drain. Mash the potatoes and mix in butter and heavy cream until smooth. Season with salt and white pepper to taste.

Caramelized Shallots

    Caramelize the Shallots

    Slice the shallots thinly. In a skillet, melt the butter over medium heat, add the shallots, and cook until softened. Sprinkle with brown sugar and balsamic vinegar, then cook until the shallots are caramelized, about 10-15 minutes.

Fig Sauce

    Prepare the Fig Sauce

    Combine dried figs and water in a saucepan and bring to a boil. Reduce heat and simmer until figs are soft, about 10 minutes. Puree the mixture, then stir in honey, lemon juice, and a pinch of salt. Cook for an additional 2 minutes.
