    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thin strips to form fries. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Preheat the Oil

    Heat the olive oil in a deep fryer or large pot to 350°F (175°C).

    Fry the Potatoes

    Drain and pat the soaked potatoes dry with paper towels. Fry the potatoes in batches for about 4-5 minutes or until they are golden brown and crispy. Remove from oil and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil, sprinkle with grated Parmesan cheese, fines herbes, salt, and black pepper to taste. Toss to combine.

    Serve the Pommes Frites hot as a delicious side dish or appetizer.
