For the Sea Island Red Pea Hoppin' John

    Cook the Peas

    In a pot, add the Sea Island red peas and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 30 minutes until tender.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onion, garlic, and green bell pepper. Sauté until softened, about 5-7 minutes.

    Combine and Cook Rice

    Add the sautéed vegetables to the pot with peas, then stir in the rice. Cover and cook on low heat for an additional 20 minutes or until the rice is cooked and the liquid is absorbed. Season with salt and black pepper to taste.

For the Bacon Vinaigrette

    Prepare the Vinaigrette

    In a bowl, whisk together the apple cider vinegar, Dijon mustard, honey, and crumbled bacon. Slowly drizzle in the olive oil while whisking to emulsify. Season with salt and black pepper to taste.

    Pat the trout fillets dry and season both sides with salt and black pepper. Drizzle with olive oil and lemon juice.
