Prepare the Pork Belly
Preheat your oven to 300°F (150°C). In a small bowl, combine brown sugar, paprika, black pepper, and cinnamon. Rub this spice mixture all over the pork belly.

Cook the Pork Belly
Place the pork belly on a baking sheet lined with parchment paper. Roast in the preheated oven for 2 to 3 hours until the meat is tender and the skin is crispy. Let it rest for 15 minutes before slicing.

Pickle the Vegetables
In a bowl, mix the rice vinegar and sesame oil. Add the julienned carrot and daikon to the mixture. Let them marinate for at least 30 minutes.

Assemble the Buns
Slice the burger buns in half. Spread a generous amount of hoisin sauce on each side of the buns. Layer sliced pork belly, pickled carrot, and daikon on the bottom half of the bun, and then place the top half on.
