    Prepare the Gnocchi

    Boil the potatoes until fork-tender, about 15-20 minutes. Drain and let cool slightly before peeling. Mash the potatoes in a bowl until smooth. Add flour, egg, and salt, mixing until a dough forms. Roll into logs, cut into pieces, and shape each piece into gnocchi.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Make the Heirloom Tomato Choron Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped heirloom tomatoes and cook until soft, about 5 minutes. Stir in butter and season with salt and black pepper. Remove from heat and blend until smooth, then return to low heat.

    Prepare the Garlic Breadcrumbs

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in breadcrumbs and cook until golden brown, about 3-4 minutes. Remove from heat.

    Combine and Serve

    In the sauce pan, add in the cooked gnocchi and local squash (cut into small cubes). Toss gently to coat. Serve topped with garlic breadcrumbs and fresh basil.
