Falafel Preparation

    Soak the dried fava beans in water overnight. Drain and rinse before use.

    In a food processor, combine soaked fava beans, chopped onion, minced garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Blend until the mixture is coarse but holds together.

    Form the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry Falafel

    Heat oil in a deep skillet over medium-high heat. Fry the falafel balls in batches until golden brown, about 4-5 minutes per side. Drain on paper towels.

Tahini Mint Yogurt Preparation

    In a bowl, combine Greek yogurt, tahini, chopped mint, lemon juice, and salt. Mix well until smooth.

Spicy Cucumber Preparation
