Wine Ingredients

Method

Wine Making Process

  1. 1

    Harvesting and Preparing Grapes

Harvest Liatiko grapes and remove stems. Wash the grapes thoroughly to ensure cleanliness.

  2. 2

    Crushing the Grapes

Crush the grapes gently to release their juice. You can use a wine press or do this by foot for a traditional approach.

  3. 3

    Fermentation

Transfer the crushed grapes into a fermentation vessel. Add water and sugar, stirring until the sugar is dissolved. Sprinkle yeast on top and cover the vessel with a cloth.

  4. 4

    Primary Fermentation

Let the mixture ferment for about 7-10 days at room temperature. Stir daily and check for bubbles, which indicate fermentation.

  5. 5

    Pressing the Wine

Once fermentation is complete, press the mixture to separate the liquid from the solids. Collect the liquid in a clean container.

  6. 6

    Secondary Fermentation

If using, add oak chips to the wine for flavor. Transfer the liquid into a glass carboy and seal with an airlock. Let it ferment for another 4-6 weeks.

  7. 7

    Bottling

After secondary fermentation, siphon the wine into clean bottles, leaving some space at the top. Seal the bottles with corks.

  8. 8

    Aging

Store the bottles in a cool, dark place for at least 6 months to allow the flavors to mature.

  9. 9

    Enjoy Your Wine

After aging, your Douloufakis Liatiko is ready to be enjoyed. Chill, pour, and savor the flavors!
