Prepare the Dough

Mix Dry Ingredients
In a large bowl, combine flour, sugar, and salt.

Add Butter
Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Gradually add ice water, mixing until the dough just comes together. Do not overwork.

Chill Dough
Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Preheat Oven
Preheat your oven to 400°F (200°C).

On a floured surface, roll out the chilled dough into a large circle, about 12 inches in diameter.

Transfer the dough to a parchment-lined baking sheet, and spread the pear filling in the center, leaving a 2-inch border.

Fold the edges of the dough over the filling, pleating it as you go.

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the pears are tender.
