Method

Prepare the Dough

  1. 1

    Mix Dry Ingredients

In a large bowl, combine flour, sugar, and salt.

  2. 2

    Add Butter

Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add ice water, mixing until the dough just comes together. Do not overwork.

  4. 4

    Chill Dough

Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

  1. 5

    Mix Filling Ingredients

In a bowl, combine the sliced Asian pears, fig jam, cinnamon, and lemon juice. Toss to coat the pears evenly.

Assemble and Bake

  1. 6

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 7

    Roll Out Dough

On a floured surface, roll out the chilled dough into a large circle, about 12 inches in diameter.

  3. 8

    Add Filling

Transfer the dough to a parchment-lined baking sheet, and spread the pear filling in the center, leaving a 2-inch border.

  4. 9

    Fold Edges

Fold the edges of the dough over the filling, pleating it as you go.

  5. 10

    Bake

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the pears are tender.

Serve

  1. 11

    Serve Warm

Let the galette cool for a few minutes before serving. Top with miso ice cream and drizzle caramel sauce over the top.
