Appetizer Preparation

Prepare the Shrimp
Boil the shrimp in salted water for about 3-4 minutes until they turn pink. Drain and let cool, then slice in half lengthwise.

Cook Vermicelli Noodles
Cook the vermicelli noodles according to package instructions. Drain and rinse with cold water to prevent sticking.

Assemble Spring Rolls
Soak each rice paper wrapper in warm water until soft, about 10-15 seconds. Lay it flat on a clean surface, then layer the shrimp, vermicelli noodles, fresh mint, basil, and lettuce in the center. Fold the sides over the filling and roll tightly from the bottom up. Repeat with remaining wrappers.

Serve
Arrange the spring rolls on a platter and serve with peanut dipping sauce.

Marinate the Chicken
In a bowl, mix fish sauce, minced garlic, sugar, and black pepper. Add chicken thighs and coat well. Let marinate for at least 30 minutes.

Cook the Chicken
Heat vegetable oil in a pan over medium heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat and garnish with sliced green onions.

Prepare Jasmine Rice
Rinse jasmine rice under cold water until the water runs clear. Cook in a rice cooker or on the stove with 400ml of water for about 15-20 minutes until fluffy.

Prepare Vegetables
Thinly slice the cucumber and carrot. In a bowl, mix sesame oil and rice vinegar. Toss the sliced vegetables in this dressing.
