Method

Preparation of Shrimp

    Season the Shrimp

    In a medium bowl, combine the large shrimp, salt, and black pepper. Toss to coat the shrimp evenly with the seasonings.

    Coat with Cornstarch

    Sprinkle cornstarch over the seasoned shrimp and mix until they are lightly coated. This will help achieve a crispy texture when cooked.

Making the Sweet & Sour Sauce

    Combine Ingredients

    In a saucepan, combine ketchup, rice vinegar, brown sugar, soy sauce, pineapple juice, minced garlic, and minced ginger. Stir well to mix all the ingredients.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to create a slurry. Add this slurry to the saucepan and bring the mixture to a simmer over medium heat, stirring constantly until the sauce thickens. Once thickened, remove from heat and set aside.

Cooking the Shrimp and Vegetables

    Heat the Oil

    In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering.

    Cook the Shrimp

    Add the coated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they are golden and cooked through. Remove the shrimp from the skillet and set aside.

    In the same skillet, add bell pepper, onion, and carrots. Stir-fry for about 3-4 minutes until they are tender-crisp.

    Return the cooked shrimp to the skillet with the sautéed vegetables. Pour the sweet & sour sauce over the top and toss everything together to coat well. Cook for an additional 2-3 minutes until heated through.
