Preparing the Rice

Cooking the Rice
Rinse the jasmine rice under cold water until the water runs clear, then drain it. In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil over high heat, then reduce the heat to low and cover with a lid. Simmer for about 18-20 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit, covered, for another 5 minutes before fluffing with a fork.

Grilling the Pork
Heat a grill or grill pan over medium-high heat. Remove the pork from the marinade and discard any leftover marinade. Grill the pork slices for about 4-5 minutes on each side or until they are fully cooked and have nice grill marks. Transfer to a plate and let rest for a few minutes before slicing into bite-sized pieces.

Pickling the Vegetables
In a small bowl, mix together rice vinegar, sugar, and salt. Add the sliced cucumber and julienned carrots, tossing to coat. Let them marinate for at least 10 minutes to absorb the flavors.
Assembling the Platter

Serving the Dish
On a large platter, place a generous portion of the steamed rice in the center. Arrange the grilled pork slices around the rice. Top with the pickled vegetables and cucumber slices. Garnish with chopped green onions and serve hot.
