Prepare the Broth

    Preheat your oven to 200°C (400°F). Place the beef bones on a baking sheet and roast them for about 30 minutes until browned. This step enhances the flavor of the broth.

    In a large pot, add the roasted beef bones and 2000 ml of water. Bring to a boil, then reduce to a simmer. Add the onion, ginger, garlic cloves, star anise, and cinnamon stick. Allow the broth to simmer for 2-3 hours, skimming off any foam that rises to the surface.

    Seasoning the Broth

    After simmering, add fish sauce, salt, and chili flakes to the broth. Taste and adjust seasoning as needed. Let it simmer for an additional 30 minutes.

    Cooking the Noodles

    While the broth is simmering, cook the rice noodles according to the package instructions. Usually, this involves soaking them in hot water for about 10-15 minutes until tender. Drain and set aside.

    Thinly slice the beef sirloin against the grain. This helps to keep the beef tender when cooked.

    Chop the fresh cilantro and slice the green onions and red chili. Set aside for garnishing.

Assembling the Soup

    In a bowl, place a portion of the cooked rice noodles. Top with raw slices of beef. Ladle the hot broth over the noodles and beef, allowing the heat to cook the beef slightly.
