    Prep Seafood

    Rinse the shrimp, scallops, and mussels under cold water. Pat dry with a paper towel and set aside.

    Chop Vegetables

    Slice the bell pepper and zucchini into thin strips. Halve the cherry tomatoes and mince the garlic.

Cooking

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Bell Pepper and Zucchini

    Add the sliced bell pepper and zucchini to the skillet. Sauté for 4-5 minutes until they begin to soften.

    Add Seafood

    Add the shrimp, scallops, and mussels to the skillet. Cook for 5-7 minutes until the seafood is cooked through and mussels have opened.

    Add Cherry Tomatoes

    Stir in the halved cherry tomatoes and continue cooking for another 2 minutes.

    Combine with Sauce

    Choose your preferred sauce (lemongrass, tomato garlic, or ginger) and pour it over the seafood and vegetable mixture. Stir to combine and heat through for an additional 2-3 minutes.

Serving

    Plate the Dish

    Once everything is cooked and combined, remove from heat. Serve hot, garnished with fresh cilantro and season with salt and black pepper to taste.
