Preparation of Ingredients

    Prepare the Rice Noodles

    Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, usually about 3-5 minutes. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Marinade

    In a bowl, combine soy sauce, lime juice, minced garlic, sesame oil, chili flakes, and honey. Mix well to create the marinade.

    Marinate the Shrimp and Pork

    Divide the marinade into two parts. Add the shrimp to one part and the sliced pork to the other. Allow them to marinate for at least 15 minutes.

    Prepare the Vegetables

    Slice the cucumber into thin rounds and wash the lettuce leaves. Set aside.

Cooking

    Grill the Shrimp and Pork

    Heat a grill or grill pan over medium-high heat. Cook the marinated shrimp for about 2-3 minutes on each side until they turn opaque. Grill the pork slices for about 3-4 minutes on each side until fully cooked.

    If using store-bought egg rolls, follow the package instructions for heating. If homemade, fry or bake them until golden brown and crispy.

    Assemble the Rice Noodle Bowl

    In a large bowl, layer lettuce leaves, followed by the rice noodles, grilled shrimp, and pork. Top with sliced cucumbers and bean sprouts. Serve with egg rolls on the side.

    Drizzle any leftover marinade as a sauce over the bowl or serve it on the side for dipping.
