Simmer Broth
In a large pot, combine the roasted onion, ginger, vegetable broth, star anise, cinnamon stick, cloves, soy sauce, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for at least 30 minutes.

Strain Broth
After simmering, strain the broth through a fine mesh sieve to remove the solids. Return the clear broth to the pot and keep it warm.
Preparing Noodles and Toppings

Cook Rice Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions, usually around 5-7 minutes. Drain and set aside.

Cook Tofu
In a skillet, heat a little oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from heat.

Assemble the Phở
In serving bowls, add a portion of the cooked rice noodles. Pour the hot broth over the noodles. Top with tofu, bean sprouts, green onions, and fresh basil leaves. Serve with lime wedges and sliced chili peppers on the side.
