Preparing the Broth
1. Roasting Aromatics
Begin by roasting the whole onion and ginger in a dry pan over medium heat until charred and fragrant, about 10 minutes. This enhances the flavor of the broth.
2. Simmering the Broth
In a large pot, add the beef bones and brisket. Pour in the water and bring to a boil. Skim off any foam that rises to the surface.
3. Adding Spices
After boiling, add the roasted onion and ginger, star anise, cinnamon stick, and cloves to the pot. Reduce heat and let it simmer for at least 2 hours, partially covered.
4. Seasoning the Broth
After simmering, remove the brisket and set aside. Add fish sauce and salt to taste. Keep the broth warm.
Cooking the Noodles and Serving
5. Cooking Rice Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions, usually about 5-7 minutes. Drain and rinse with cold water.
6. Slicing the Brisket
Once the brisket is cool enough to handle, slice it thinly against the grain.
7. Assembling the Bowls
In serving bowls, add a portion of cooked rice noodles. Top with slices of brisket and ladle the hot broth over the top.
8. Adding Toppings
Garnish with fresh basil, bean sprouts, lime wedges, sliced jalapeños, and chopped green onions. Serve immediately.
