Broth Preparation

    Prepare the Chicken

    Clean the chicken under cold running water and place it in a large pot.

    Add Water

    Pour 3 liters of water into the pot with the chicken.

    Char Onion and Ginger

    In a dry pan over medium heat, char the halved onion and sliced ginger until fragrant and slightly browned. This will enhance the flavor of the broth.

    Add Aromatics

    Add the charred onion, ginger, star anise, cinnamon stick, and cloves to the pot.

    Season the Broth

    Pour in the fish sauce and add salt to the pot.

    Simmer

    Bring the pot to a boil, then reduce heat to low and let it simmer for about 1.5 hours or until the chicken is cooked thoroughly.

    Remove Chicken

    Once cooked, remove the chicken from the pot and let it cool. Strain the broth to remove solids and return it to the pot.

    Shred Chicken

    Once the chicken is cool enough to handle, shred the meat into bite-sized pieces.

Noodle and Topping Preparation

    Cook Rice Noodles

    In a separate pot, cook the rice noodles according to package instructions. Drain and set aside.

    Prepare Toppings

    While the noodles are cooking, prepare the toppings: rinse the bean sprouts, wash the fresh herbs, cut lime into wedges, and slice the chili peppers and green onions.

    Assemble the Phở

    In a bowl, place a portion of rice noodles, top with shredded chicken, and ladle the hot broth over it. Add bean sprouts, fresh herbs, lime wedges, and sliced chili peppers on the side.
