Preparing the Broth

    Roasting the Aromatics

    In a dry skillet over medium heat, roast the ginger and onion halves until they are charred and fragrant, about 5-7 minutes.

    Simmering the Broth

    In a large pot, combine the vegetable broth, charred ginger and onion, star anise, cinnamon stick, cloves, salt, and soy sauce. Bring to a boil, then reduce heat and let simmer for at least 30 minutes.

    Straining the Broth

    After simmering, strain the broth through a fine mesh sieve to remove the solids. Return the clear broth to the pot and keep warm.

Cooking the Noodles and Assembling the Dish

    Cooking the Rice Noodles

    Prepare the rice noodles according to package instructions, usually by soaking them in hot water for about 10-15 minutes until softened. Drain and set aside.

    Assembling the Phở

    In serving bowls, place a portion of the cooked rice noodles. Ladle the hot broth over the noodles.

    Adding Toppings

    Top the phở with bean sprouts, fresh basil leaves, chopped green onions, sliced jalapeños, and lime wedges.
