Broth Preparation

Roasting the Bones
Preheat your oven to 200°C (400°F). Place the beef bones in a roasting pan and roast for about 30-40 minutes until browned.

Making the Broth
In a large pot, add the roasted beef bones and 4 liters of water. Bring to a boil, then reduce to a simmer. Skim any foam that rises to the surface.

Simmering
Simmer the broth for at least 3-4 hours, adding water as necessary to keep the liquid level constant. Strain the broth and discard the solids.
Noodles and Toppings Preparation

Cooking the Noodles
Prepare the rice noodles according to package instructions. Drain and set aside.

Preparing the Beef
Thinly slice the raw beef. It is easier to slice when slightly frozen.

Assembly
In serving bowls, place a portion of cooked rice noodles. Top with raw sliced beef, and pour hot broth over the top to cook the beef.

Garnishing
Garnish with fresh herbs, bean sprouts, lime wedges, sliced chili peppers, and chopped green onions. Serve immediately.
