Clay Pot Preparation

Method

Mussels Preparation

  1. 1

    Clean the Mussels

Rinse the New Zealand green-lipped mussels under cold running water. Scrub the shells with a brush to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.

  2. 2

    Prepare the Garlic and Basil

Peel and finely chop the garlic cloves. Rinse the fresh basil leaves and pat them dry. Tear the basil leaves into smaller pieces.

Clay Pot Cooking

  1. 3

    Heat the Olive Oil

In a clay pot, add the olive oil and heat over medium flame.

  2. 4

    Sauté Garlic

Add the chopped garlic to the heated olive oil and sauté for about 2 minutes, or until fragrant and golden.

  3. 5

    Add Mussels and Seasoning

Add the cleaned mussels to the pot. Pour in the lemon juice and season with salt, black pepper, and red chili flakes. Stir gently to combine.

  4. 6

    Cook the Mussels

Cover the clay pot with a lid and allow the mussels to cook for about 5-7 minutes, or until the mussels have opened up.

  5. 7

    Add Basil and Serve

Once the mussels are cooked, remove the pot from heat. Stir in the torn basil leaves and serve immediately with crusty bread.
