Method

Preparation

  1. 1

    Prepare the Chicken

Cut the chicken breast into bite-sized pieces. Marinate with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch for 15-20 minutes.

  2. 2

    Chop the Vegetables

While the chicken is marinating, chop the bell peppers into small pieces, slice the green onions, and mince the garlic and ginger.

Sauce Preparation

  1. 3

    Mix the Sauce

In a bowl, combine the remaining soy sauce, rice vinegar, hoisin sauce, sesame oil, cornstarch, water, and red pepper flakes. Stir until well mixed.

Cooking

  1. 4

    Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

  2. 5

    Cook the Chicken

Add the marinated chicken pieces to the skillet. Stir-fry for 5-7 minutes until the chicken is cooked through and lightly browned.

  3. 6

    Add the Vegetables

Add the chopped bell peppers, garlic, and ginger to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

  4. 7

    Add the Sauce

Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly. Cook for another 2-3 minutes until the sauce thickens slightly.

  5. 8

Finish with Peanuts and Green Onions

Stir in the roasted peanuts and sliced green onions. Cook for another minute, then remove from heat.
