Method

Shrimp Preparation

  1. 1

    Season the Shrimp

In a large bowl, combine the deveined and peeled jumbo shrimp with salt, black pepper, paprika, garlic powder, and lemon juice. Toss to coat the shrimp evenly with the seasoning. Allow them to marinate for about 15-20 minutes.

Batter and Coating

  1. 2

    Prepare the Coatings

In a shallow dish, mix the all-purpose flour, cornstarch, and a pinch of salt together. In another bowl, whisk the eggs and milk until well combined. In a third bowl, place the breadcrumbs.

  2. 3

    Coat the Shrimp

Take each marinated shrimp, dredge it in the flour mixture, shaking off the excess. Dip it into the egg wash, allowing any excess to drip off, and then coat it in the breadcrumbs. Press the breadcrumbs gently to adhere well. Repeat for all shrimp.

Frying

  1. 4

    Heat the Oil

In a large, deep skillet or a heavy-bottomed pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Shrimp

Carefully add the coated shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the shrimp and drain on paper towels.

Serving

  1. 6

    Serve

Transfer the fried shrimp to a serving platter. Serve immediately with lemon wedges and cocktail sauce on the side.
