    Begin by cutting the beef into 1-inch cubes. Chop the onion, mince the garlic, slice the bell pepper and carrot, and set aside.

    In a large claypot or heavy pot, heat the olive oil over medium-high heat. Add the beef cubes and sear them until browned on all sides, approximately 5-7 minutes. Remove the beef and set aside.
