Prepare the Chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces. Season with a pinch of salt and black pepper.

Prep the Vegetables
Dice the bell pepper and onion into bite-sized pieces. Mince the garlic cloves and grate the fresh ginger.

Make the Sauce
In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, water, sesame oil, and mix well until the cornstarch is dissolved.

Cook the Chicken
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add another tablespoon of oil if necessary. Add the diced onion, bell pepper, minced garlic, and grated ginger. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
