Prepare the Salmon
Rinse the salmon fillet under cold water and pat dry with paper towels. Cut into bite-sized pieces and set aside.

Prepare the Vegetables
Minced the shallots and garlic, slice the ginger into thin pieces, and slice the red chili as desired.

Heat the Oil
In a clay pot or a heavy-bottomed pot, heat the cooking oil over medium heat.

Add Salmon
Gently add the salmon pieces to the pot, being careful not to break them. Stir gently to coat with the aromatic mixture.

Prepare the Sauce
In a small bowl, mix soy sauce, fish sauce, brown sugar, black pepper, and water. Pour this mixture over the salmon in the pot.

Cover the pot and let it simmer on low heat for about 15-20 minutes, allowing the flavors to meld and the salmon to cook through.

Once cooked, garnish the dish with chopped green onions and cilantro. Serve hot with steamed rice.
