Prepare the Bones
Rinse the beef bones under cold water to remove any impurities. Place them in a large pot and cover with water. Bring to a boil for 10 minutes, then drain and rinse the bones again.

In the same pot, add the cleaned bones back in with 3 liters of fresh water. Add the whole onion, bruised lemongrass stalks, salt, fish sauce, sugar, chili powder, star anise, and cinnamon stick. Bring to a boil and then reduce to a simmer. Cook for at least 2 hours, skimming off any foam that rises to the surface.

Cook the Meat
After the broth has simmered for 2 hours, add the beef brisket and pork hocks to the pot. Continue to simmer for another 1-1.5 hours until the meat is tender.

Prepare the Noodles
While the meat is cooking, prepare the rice vermicelli noodles according to package instructions. Usually, this involves soaking them in hot water until soft, then draining.

Once the meat is tender, remove it from the broth and slice it thinly. Strain the broth to remove all solids, then return it to the pot and keep warm. To serve, place a generous amount of noodles in a bowl, top with sliced beef and pork, and ladle the hot broth over. Garnish with fresh herbs, lime wedges, and sliced chili peppers.
