    Heat the Milk

    In a saucepan, pour the whole milk and heat over medium heat until it reaches around 85°C (185°F). Stir occasionally to prevent the milk from scorching.

    Cool the Milk

    Remove the saucepan from heat and let the milk cool down to about 43°C (110°F). This is the optimal temperature for the yogurt cultures to thrive.

    Add Yogurt Culture

    In a small bowl, mix the 2 tablespoons of plain yogurt with a few tablespoons of the warm milk until smooth. Then, stir this mixture back into the saucepan with the rest of the warm milk.

    Incubate the Yogurt

    Cover the saucepan with a lid or a towel and place it in a warm spot (like inside an oven with the light on, or an insulated cooler) for about 6 to 12 hours. The longer it sits, the thicker and tangier it will become.

    Check the Consistency

    After the incubation period, check the yogurt. It should be thickened and tangy. If it has not set, you can leave it for a few more hours.

    Chill the Yogurt

    Once the yogurt has reached your desired thickness, transfer it to the refrigerator and chill for at least 2 hours before serving.

    If desired, once the yogurt is chilled, you can mix in honey, vanilla extract, or fresh fruit before serving to enhance the flavor.
