Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This helps to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat. Once boiling, cover, reduce heat to low and simmer for 18-20 minutes, or until water is absorbed. Remove from heat and let stand for 10 minutes.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl, and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.

In a medium bowl, combine the drained canned tuna, mayonnaise, soy sauce, sesame oil, and chopped green onion. Mix well until all ingredients are combined.
Assemble the Rolls

Prepare Nori Sheets
Place a bamboo sushi mat on a flat surface. Place a sheet of nori, shiny side down, on the mat.

With wet hands, take about 3/4 cup of sushi rice and evenly spread it over the nori, leaving about 1 inch of space at the top edge.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Roll until you reach the edge of the nori.

Seal the Roll
Wet the top edge of the nori with a little water to seal the roll. Use the bamboo mat to shape the roll into a cylinder.

With a sharp knife, slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

Sprinkle sesame seeds over the sliced rolls for garnish. Serve with soy sauce, pickled ginger, and wasabi on the side.
