Prepare the Steak
Take the ribeye steaks out of the refrigerator and allow them to come to room temperature, about 30 minutes before grilling.

Fry the Potatoes
Drain and pat dry the soaked potato strips. Carefully add them to the hot oil in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Grill the Steak
Preheat a grill or grill pan over high heat. Grill the ribeye steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer to check for an internal temperature of 130-135°F (54-57°C) for medium-rare.

Plate and Serve
Let the steaks rest for 5 minutes before slicing. Serve the grilled ribeye steak alongside a generous portion of fries. Optionally, garnish with additional rosemary and serve with your favorite dipping sauces.
