Method

Preparation

  1. 1

    Slice the Steak

Using a sharp knife, slice the ribeye steak into thin strips against the grain. This will help ensure tenderness.

  2. 2

    Prepare the Vegetables

Slice the onion, bell pepper, and mushrooms into thin strips. Set aside.

Cooking

  1. 3

    Cook the Steak

In a large skillet, heat the olive oil over medium-high heat. Add the sliced steak, salt, and black pepper. Sear for about 3-4 minutes until cooked to your desired doneness. Remove the steak from the skillet and set aside.

  2. 4

    Sauté the Vegetables

In the same skillet, add the sliced onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes until softened and slightly caramelized.

  3. 5

    Combine Steak and Vegetables

Return the cooked steak to the skillet with the sautéed vegetables. Mix well and cook for an additional 2 minutes to heat through.

Assembly

  1. 6

    Prepare the Sub Rolls

Slice the sub rolls lengthwise without cutting all the way through. Spread 1 tablespoon of mayonnaise inside each roll.

  2. 7

    Fill the Subs

Divide the steak and vegetable mixture evenly among the sub rolls. Top each sub with 2 slices of provolone cheese.

  3. 8

    Melt the Cheese

Place the filled subs under a broiler for about 1-2 minutes, just until the cheese is melted and bubbly.

  4. 9

    Add Condiments

Drizzle hot sauce over the melted cheese to taste, then close the subs.
