Making the Pie Crust

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Add the unsalted butter, cut into small cubes, to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

Wash, peel (if necessary), and slice the fresh fruit of your choice, measuring out about 4 cups.

In a bowl, combine the sliced fruit, granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract. Toss to coat the fruit evenly.
Assembling the Pie
