Oysters
Cocktail Sauce
Method
Preparing the Oysters
- 1
Shuck the Oysters
Using an oyster knife, carefully insert the blade into the hinge of each oyster. Twist the knife to pop the shell open and slide the knife along the top shell to cut the muscle, then remove the top shell. Slide the knife under the oyster to detach it from the bottom shell, keeping the oyster in its shell.
- 2
Arrange on Ice
Place the shucked oysters on a bed of crushed ice on a serving platter to keep them cold and fresh.
Making the Cocktail Sauce
- 3
Mix the Ingredients
In a medium bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir until well mixed.
- 4
Taste and Adjust
Taste the cocktail sauce and adjust the heat by adding more hot sauce if desired. Mix again until combined.
Serving
- 5
Serve the Oysters
Serve the freshly shucked oysters with the cocktail sauce on the side for dipping. Optionally, garnish with lemon wedges.
