    Grill Chicken and Salmon

    Preheat your grill to medium-high heat. Season the chicken breast and salmon fillet with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Grill the salmon for about 4-5 minutes on each side, or until it flakes easily with a fork.

    Prepare Vegetables

    While the proteins are grilling, steam the broccoli until bright green and tender, about 5 minutes. For the carrots, toss them in olive oil, salt, and pepper, and roast in a preheated oven at 400°F (200°C) for about 20 minutes or until tender.

    Cook Quinoa

    Rinse quinoa under cold water. In a saucepan, add 1 cup of quinoa to 2 cups of water. Bring to a boil, then reduce to a simmer and cover. Cook for about 15 minutes or until the water is absorbed. Fluff with a fork.

    Make Lemon Butter Sauce

    In a small saucepan, melt 3 tablespoons of butter over low heat. Stir in fresh lemon juice and a pinch of salt. Keep warm until ready to serve.

Plating

    Assemble the Plate

    On a large plate, place half of the quinoa as a base. Arrange the grilled chicken breast and salmon fillet on top. Next to the proteins, add a serving of steamed broccoli and roasted carrots.

    Add Sauce and Garnish

    Drizzle the lemon butter sauce over the proteins. Sprinkle fresh parsley over the entire plate for garnish. Serve with a lemon wedge on the side.
