Method

Preparing the Fish

  1. 1

    Marinate the Haddock

In a mixing bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and paprika. Mix well to create a marinade.

  2. 2

    Coat the Haddock

Place the haddock fillets in the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes in the refrigerator.

Preparing the Vegetables

  1. 3

    Prepare the Asparagus

Trim the woody ends off the asparagus and wash under cold water. Pat dry with a paper towel.

  2. 4

    Slice the Red Onion

Peel and slice the red onion into thin rings.

  3. 5

    Halve the Cherry Tomatoes

Wash the cherry tomatoes and cut them in half.

Cooking

  1. 6

    Cook the Fish

Preheat a non-stick skillet over medium heat. Add the marinated haddock fillets to the skillet and cook for about 4-5 minutes on each side or until the fish flakes easily with a fork.

  2. 7

    Cook the Vegetables

In the same skillet, add the asparagus, sliced red onion, and cherry tomatoes. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp.

Serving

  1. 8

    Plate the Dish

On a serving plate, place the cooked haddock fillet alongside the sautéed vegetables.

  2. 9

    Garnish

Sprinkle fresh parsley over the dish and add lemon wedges on the side for garnish.
