Base Ingredients

Method

Preparation of Pudding Base

  1. 1

    Heat the Milk

In a medium saucepan, pour in 2 cups of milk and heat over medium heat until it begins to steam, but do not let it boil.

  2. 2

    Combine Dry Ingredients

In a separate bowl, mix together 1 cup of sugar, 1 tablespoon of cornstarch, and a pinch of salt. Stir until well combined.

  3. 3

    Add Dry Ingredients to Milk

Once the milk is steaming, gradually whisk in the dry ingredient mixture to avoid lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.

  4. 4

    Add Vanilla Extract

Remove the saucepan from heat and stir in 2 teaspoons of vanilla extract until fully incorporated.

Flavoring and Freezing

  1. 5

    Add Optional Flavorings

If desired, add 1 tablespoon of cocoa powder or peanut butter, or 1 cup of fruit puree to the pudding base. Stir well to combine.

  2. 6

    Cool the Mixture

Allow the pudding mixture to cool to room temperature. You can speed this up by placing it in the refrigerator for about 15 minutes.

  3. 7

    Freeze the Pudding

Once cool, pour the pudding into a freezer-safe container. Cover securely and freeze for at least 4 hours, or until firm.

  4. 8

    Serve

To serve, scoop the frozen pudding into bowls. If too hard, let it sit at room temperature for a few minutes to soften slightly before serving.
