Preparation of Vegetables

    Prepare the Mushrooms

    Clean the mushrooms with a damp cloth and remove the stems. Cut them into halves or quarters depending on their size.

    Cut the cauliflower into small florets and rinse them under cold water. Pat them dry with a towel.

    Wash the tomatoes and slice them into thick rounds.

Batter Preparation

    Mix the Batter

    In a bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add water and whisk until you achieve a smooth batter consistency.

Pickle Preparation

    Make the Pickles

    Slice the cucumber into thin rounds. In a bowl, combine salt, vinegar, sugar, and dill. Add cucumber slices and mix well. Let them sit for at least 30 minutes.

Frying

    Heat the Oil

    In a large pot or deep pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Dip each piece of mushroom, cauliflower floret, and tomato slice into the batter, then carefully place them in the hot oil. Fry in batches until golden brown and crispy, about 4-5 minutes per batch.
