Preparation of Base

1. Combine Milk and Cream

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

2. Add Sugar and Salt

Once the milk and cream are hot, add the granulated sugar and a pinch of salt. Stir until the sugar is completely dissolved.

3. Add Vanilla Extract

Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool slightly.

Egg Mixture Preparation

4. Whisk Egg Yolks

In a separate bowl, whisk the egg yolks until they are light and frothy.

5. Temper Egg Yolks

Slowly pour about a cup of the hot milk mixture into the bowl with the egg yolks, whisking constantly to temper the eggs. This prevents the yolks from scrambling.

6. Combine Mixtures

Pour the tempered egg yolk mixture back into the saucepan with the remaining milk and cream mixture. Stir well.

Cooking

7. Cook the Mixture

Return the saucepan to medium-low heat and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 8-10 minutes.

8. Strain the Mixture

Remove from heat and strain the mixture through a fine-mesh sieve into a bowl to remove any cooked egg bits.

9. Cool and Chill

Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight to chill completely.

Serving

10. Serve

Once chilled, give the mixture a good stir and serve in bowls or cups. Optionally, top with whipped cream or additional vanilla beans for garnish.
