Prep the Vegetables
Dice the onion and bell pepper, and mince the garlic cloves.

Drain the Beans
Open the cans of kidney beans, black beans, and pinto beans. Drain and rinse them under cold water.
Cooking

Cook the Beef
In a large pot or Dutch oven, over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.

Stir in Beans and Tomatoes
Add the drained beans and canned diced tomatoes (with juices) to the pot. Mix well.

Season the Chili
Add chili powder, cumin, paprika, salt, and black pepper to the mixture. Stir until all ingredients are well combined.

Simmer
Reduce heat to low. Cover the pot and let the chili simmer for at least 30 minutes, stirring occasionally.
Serving

Serve the Chili
Ladle the chili into bowls. Top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped green onions.
