Chicken Parmesan

Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place flour in the first dish, beaten eggs in the second, and a mixture of breadcrumbs and grated Parmesan cheese in the third.

Bread the Chicken
Dredge each chicken breast in flour, shaking off any excess. Dip into the beaten eggs, then coat with the breadcrumb and cheese mixture, pressing gently to adhere.

Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken and cook for 4-5 minutes on each side, or until golden brown.

Add Sauce and Cheese
Transfer the chicken to a baking dish. Spoon marinara sauce over each piece, then sprinkle with shredded mozzarella cheese.

Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and the chicken is cooked through.

Prepare Potatoes
Wash and peel the potatoes, then cut them into thin strips.

In a large bowl, toss the potato strips with olive oil, salt, and black pepper until evenly coated.

Spread the potato strips in a single layer on a baking sheet. Bake in the oven for 25-30 minutes, flipping halfway through, until golden and crispy.

Prepare Vegetables
In a large bowl, combine shredded cabbage and shredded carrots.

In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Pour the dressing over the cabbage and carrots, tossing to coat. Cover and refrigerate for at least 30 minutes before serving.
