Calamari Preparation

Prepare the Calamari
Rinse the cleaned calamari under cold water and pat dry with paper towels. Cut the calamari into rings about 1/2 inch thick.

Make the Breading Mixture
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well until combined.

Coat the Calamari
Dip the calamari rings into the buttermilk, allowing excess to drip off. Then, dredge the rings in the breading mixture, ensuring they are well coated. Set aside.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove from the oil and drain on paper towels.

Cook the Sauce
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes to the saucepan. Stir well and let it simmer for about 15 minutes, stirring occasionally.

Remove from heat and stir in the chopped fresh parsley. Adjust seasoning if needed.
