Prepare the Cheese
Cut the kasseri cheese into thick slices, about 1 inch thick.

Coat the Cheese
Dredge each slice of cheese in all-purpose flour, making sure to coat all sides evenly.

Heat the Oil
In a frying pan, heat the olive oil over medium heat until hot but not smoking.

Fry the Cheese
Carefully place the coated cheese slices in the hot oil. Fry for about 2-3 minutes on each side until golden brown and crispy.

Flambé the Cheese
Once the cheese is golden brown, carefully pour the ouzo or brandy over the cheese and ignite with a long lighter. Allow the flames to subside as the alcohol burns off.

Serve
Transfer the flaming saganaki to a serving plate, serve immediately with lemon wedges on the side.
