    Prepare the Filling

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened and translucent, about 5 minutes. Add the fresh spinach and cook until wilted, then remove from heat and let cool slightly.

    Mix the Filling

    In a mixing bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, chopped dill, salt, and pepper. Mix well to combine all ingredients.

    Assemble the Spanakopita

    Preheat the oven to 180°C (350°F). Lay out 3 sheets of phyllo dough on a clean surface, brushing each sheet with olive oil. Place a portion of the filling at one end, fold the sides over, and roll tightly into a log. Place the rolled spanakopita on a baking sheet lined with parchment paper. Repeat with the remaining filling and phyllo.

    Bake

    Brush the tops of the spanakopita with olive oil and bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.

    Serve

    Remove from the oven and let cool for a few minutes before serving. Enjoy your delicious Spanakopita warm or at room temperature.
